These cookies are so good I had to share! They taste a oatmeal cookies with a hint of pumpkin bread....sooo good!
2 c flour
1 1/3 c oats
1 tsp baking soda
1 tsp cinnamon
2 tsp pumpkin pie spice
1/2 tsp salt
1 c butter or margarine, softened (I use butter flavored Crisco)
1 c pumpkin puree
1 c packed brown sugar
1 c sugar
1 large egg
1 tsp vanilla
Preheat oven to 350. Grease baking sheets.
Combine flour, oats, baking soda, cinnamon, pie spice and salt in medium bowl. Beat butter, brown sugar and sugar in large mixer bowl until light and fluffy. Add pumpkin, egg and vanilla; mix well. Add flour mixture; mix well. Drop 1/4 cup of dough on baking sheet; spread into 3 inch circle or oval. Repeat with remaining dough.
Bake 14-16 minutes or until cookies are firm and lightly browned. Cool on baking sheets for 2 minutes; move to wire racks to cool completely.
Makes 20-25 large cookies.
